Have you ever had the chance to enjoy a light and fluffy Russian Teacake cookie during Christmas? If you haven’t, this cookie is perfect since it only uses a handful of ingredients and goes well with any cup of coffee or tea. In thinking back to when my mother would make these, id always manage to sneak a few that were freshly rolled in the powder sugar and slightly warm! Boy oh boy were those the best.


Russian Teacakes

Yields 36 cookies

Ingredients

1 cup vegan butter

1/2 cup powdered sugar

1 tsp. vanilla extract

2-1/4 cups all-purpose flour

1/4 tsp. Vitacost Himalayan Fine Pink Salt

3/4 cup finely chopped pecans

powdered sugar to roll

Directions

  1. Preheat oven to 400 degrees F.
  2. In a kitchen-aid mixer, cream together the butter and sugar for 1-2 minutes.
  3. Add the vanilla, salt and slowly incorporate the flour into the mixture until the cookie dough forms. Then add the pecans until combined.
  4. Roll the dough into 1-in diameter balls and place onto a non-stick cookie sheet.
  5. Bake for 10-12 minutes until set, not browned.
  6. Remove form oven and roll the warm cookie into the powdered sugar. Take out of the powder sugar and allow to cool.
  7. Once cooled, place the cookies back into the powder sugar and re-roll to coat.
  8. Serve with coffee or tea.

Chef’s tip: If you’d like, you could also make this recipe with hazelnuts. Just roast them and crack them open!

Carrot Cake with “Cream Cheese” Frosting

This spiced cake with organic carrots and a non-dairy cream cheese frosting is perfect for any occasion or birthday celebration! Feel free to make this cake gluten-free by using TigerNut flour- its’ a great option for those with nut allergies. I do have to warn you that this cake is effortless to make and dangerously moist so be careful when you taste how flavorful it is. Thanks to this recipe that I get to share with you all, you too will be able to enjoy this amazing dessert!

Carrot Cake

Ingredients

Cake:

2 cups organic flour

2 tsp. baking powder

1 tsp. baking soda

1-1/2 tsp. ground cinnamon

1/2 tsp. ground ginger

1/4 tsp. nutmeg

1/2 tsp. Vitacost Himalayan Fine Pink Salt

4 Tbsp. Bob’s Red Mill Egg Replacer + 8 Tbsp. filtered water

1 cup organic sugar

1 cup Vitacost brown sugar

3/4 cup avocado oil

1/4 cup apple sauce

1/4 cup crushed pineapple

1 tsp. vanilla extract

3 cups shredded carrots

Cream Cheese Frosting:

1 (8 oz) Mykonos Cream cheese 

1/2 cup vegan butter, softened

2 cups Vitacost powdered sugar 

1 tsp. vanilla extract

Directions 

Cake:

  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl, combine white and brown sugar with oil and Egg Replacer. Mix until well combined and then add the apple sauce, crushed pineapple, and vanilla. 
  3. Then add the nutmeg, cinnamon, ginger, salt, baking soda, baking powder, and the flour. Once mixed, add the carrots and fold them in. 
  4. In a greased cake pan, pour the cake batter in and place in the preheated oven for 30-35 minutes or until the top is nice and golden brown. 

Frosting:

  1. In a bowl combine all ingredients and beat until frosting has formed. 
  2. Spread evenly over the cake once it has cooled and top with walnuts. 

Chef’s tip: If you would like, you can add 1/2 cup raisins to the batter at the end, mixing it in.

Dark Chocolate Bark with Pistachio and Cranberries

Holiday treats are always the best! Gooey caramel sauce being dribbled over gluten-free matzo squares and baked until bubbly and thick. And if that does not get your attention, wait until you smear the chocolate chips over the entire sheet, until its fully covered and completely melted. Only to heavily sprinkle the pistachio and homemade cranberries on top, with a dash of rock salt. Put this plate down at any party you go to and just watch as you see how quickly it goes!

Yields 20 pieces

Ingredients 

Bark:

2-1/2 sheets of gluten-free Matzo

1 cup organic sugar

1 cup Earth’s Balance Vegan Buttery Sticks

1/4 tsp. Vitacost Himalayan Fine Pink Salt

1/2 cup homemade dried cranberries 

8 oz. Vitacost Semi-Sweet Chocolate Mini-Chip

1/2 cup Vitacost Organic Roasted Salted Pistachios, de-shelled and chopped 

1/2 tsp. coarse sea salt 

Caramel: 

1 cup organic sugar

1 cup Earth’s Balance Vegan Buttery Sticks

Directions 

  1. Set oven to 350 degrees F.
  2. Line a baking sheet with parchment paper and lay Matzo flat and set aside. 
  3. In a sauce pan, combine sugar and butter on medium heat. Once the sugar has fully melted, turn heat to high and boil until brown in color or pulling away from the sides of the pot. 
  4. Add the Himalayan Pink salt to the caramel, pouring the mixture directly into the Matzo.
  5. Bake for 10 minutes until caramel is a nice dark amber color. 
  6. Remove from oven and swiftly pour chocolate chips onto the top of the hot brittle. With a spatula, carefully spread the chocolate evenly over the entire top. 
  7. Sprinkle with chopped pistachio, homemade dried cherries, and coarse sea salt. Allow chocolate to set in fridge for 1 hour and caramel to harden before cutting and serving. 

Chef’s tip: Be creative with this dessert and add different nuts or fruit to the top of your liking. Shredded coconut flakes would be a great addition to this.

Feast your eyes on the best Banana Cream Pie that is 100% dairy-free and homemade! This graham cracker pie shell filled with bananas and a homemade vanilla pudding is the ultimate dessert! Simply add cacao nibs and sliced bananas to the top and you are ready to serve. This banana cream pie has an amazing natural flavor of fresh organic bananas as well as a smooth  coconut cream.

Banana Cream Pie

Yields 8 slices

Ingredients

1 Keebler Ready Crust Graham Pie Crust

1/3 cup organic cane sugar

2 Tbsp. cornstarch

1-1/2 cup almond milk

1 tsp. vanilla extract + 1/2 tsp. for whipped cream

1-2 banana, sliced

1 (14 oz) can coconut cream, not the liquid

4 Tbsp. Vitacost powdered sugar

pinch of Vitacost Himalayan Fine Pink Salt, optional

Directions

  1. In a sauce pan on medium-high heat, add the almond milk, sugar, cornstarch and salt; stirring until dissolved.
  2. Once mixture is boiling, reduce to medium-low and cook for 2-3 minutes, removing from heat and setting side. When cooled, add the vanilla extract.  Place into a glass bowl and cover the top. Chill for 2 hours in the fridge.
  3. In a KitchenAid stand mixer, add the cream and whip on high until soft peaks form. Slowly add the powder sugar to the mixer. Then add the vanilla and whip again for 1-2 minutes.
  4. Take the pudding out of the fridge and fold together the whipped cream and pudding. 
  5. Slice bananas and add some to the bottom layer. Fill with pudding mixture and top with bananas, cacao nibs, and extra whipped cream if you’d like. Place back into the fridge for 2 hours to set before serving.

Chef’s tip: For optimal quality, allow to set overnight and then serve.

Cuque de banana (Banana Cake)

This recipe was shown to me by a coworker who wanted to challenge me to think outside my comfort zone and bring a childhood memory of hers back to life. Cuque de Banana is a classic Brazilian banana cake that is normally made with eggs and milk, so I decided to create my own plant-based version. Essentially, it’s a cross between crumb cake and banana bread and it’s super addicting. This dish makes a wonderful breakfast or even an after dinner treat. Whichever you decide, just know that a hint of Brazil has touched your kitchen.

Cuque de banana (Banana Cake)

Ingredients 

Cake:

3 Tbsp. Bob’s Red Mill Egg Replacer + 6 Tbsp. filtered water

2 Tbsp. vegan butter, softened

1 cup plain almond milk

1-1/2 cup organic sugar 

2-1/2 cup whole wheat flour

1 Tbsp. baking powder

1 tsp. vanilla extract

4 bananas

1/2 tsp. Vitacost Himalayan Fine Pink Salt

Crumb Topping:

1/2 cup whole wheat flour

1/3 cup organic sugar

1 Tbsp. ground cinnamon

4 Tbsp. vegan butter, melted

1/4 tsp. Vitacost Himalayan Fine Pink Salt

Directions

  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl, coming the sugar and butter. Mix well until smooth, add the eggs and stir until combined. Mix in the almond milk and vanilla, set aside. 
  3. In another mixing bowl, sift flour, salt, and baking powder. Pour mixture into into wet ingredients and stir to combine.
  4. To make the crumb topping: pour all ingredients into a bowl and mix well. Set aside until you are ready to assemble. 
  5. Take your cake pan and line it with parchment paper and grease it with butter and pour cake batter in. 
  6. Slice bananas in half and then in half long ways. Place the bananas on top of the cake and top with the crumble mixture.
  7. Bake cake for 40-45 minutes or until a toothpick comes out clean.
  8. Allow cake to cool slightly before serving. 

Chef’s tip: When using the toothpick to check on the cake, make sure you do not get a banana chunk. This will make you think the cake is not finished cooking, when it could be done. 

Condensed “Milk”

Buying condensed “milk” from the store can be quite tricky when you are dairy-free, which is why I have created this 2 ingredient simple version. The only ingredients that you will need are full fat coconut cream (the entire can) and organic cane sugar. Simply reduce the two together to get an amazing ingredient that you can use for baking, caramel, and other recipes!

Condensed "Milk"

Yields 8 oz

Ingredients 

2/3 cup sugar

1 can full fat coconut cream (and liquid)

Directions

  1. In a sauce pan, add all ingredients and set to medium-high heat. Stir until sugar dissolves.
  2. Once a summer begins, set your timer for 40-45 minutes and reduce heat to low. Allow to reduce and turn darker in color. 
  3. Transfer liquid to a mason jar or other container to cool. 

 

Chef’s tip: Make sure not to stir this mixture during the cooking process at all or it will cause crystals to form. 

Rich Dark Chocolate Mousse

Rich and decadent chocolate mousse has never been so easy to make! Using both cacao nibs and Hershey’s unsweetened coco powder gives this recipe a dynamic duo that will make you melt in your seat. Grinding up the cacao nibs into a fine powder is key to getting this texture right, but once you do, it will be amazing and well worth it! Treat yourself and your friends to this truly amazing dessert that may leave you licking the bowl at the end.

Chocolate Mousse

Yields 3 servings

Ingredients

1 container silken tofu (454 g/1 lb)

3 Tbsp. Madhava organic amber raw blue agave

1/4 cup Vitacost organic ground chocolate-covered cacao nibs – non-GMO

1/4 cup Hershey’s Natural Unsweetened Cocoa

Directions

  1. Blend all ingredients in your Vitamin blender until smooth.
  2. Pour into ramekins and place in the refrigerator to set for 30 minutes.
  3. Serve with fresh fruit and mint sprigs.

Chef’s tip: Using freshly ground cocoa nibs will deepen the chocolate flavor, if you do not have, it is more than alright to use a 1/2 cup of Hershey’s chocolate powder instead.

Pumpkin Spice French Macarons

This airy and fluffy “cookie” is one of my favorite treats to indulge on. Being able to create a French macaron recipe in my own kitchen is something I have always wanted to do. So here we have my pumpkin spice French macaron filled with a pumpkin buttercream. One of the most interesting things that you will learn from this recipe (other than patience) is in the power of food alternatives. Using chickpea liquid and sugar as your meringue base really goes to show that you can still create these delicious desserts, without diary or the use of eggs. With that being said, I hope you enjoy this recipe and bon appétit!

Ingredients

Shell:

1/2 cup concentrated aquafaba, (chickpea liquid)

3 Tbsp. fine granulated sugar

100g Vitacost almond flour

200g Vitacost powdered sugar

1 tsp. pumpkin spice

Buttercream:

3/4 cups Earth Balance Vegan Buttery Sticks, room temperature

2 1/4 cups Vitacost powdered sugar

1 3/4 tsp. plain almond milk

1 1/2 Tbsp. organic pumpkin puree, homemade

1/8 tsp. Pumpkin spice seasoning 

French Macaron

Directions

Aquafaba concentrate
1. In sauce pan over medium-high heat, pour in both cans chickpea liquid AKA aquafaba (save chickpeas for my hummus recipe). Reduce liquid until 1/2 cup remains. Pour liquid into container and cool in refrigerator overnight (this step is very important).

Shell:

  1. In food processor, pulse almond flour and powdered sugar until super fine. Add pumpkin spice, pulse and set aside.
  2. To make meringue, use stand mixer to whip cold aquafaba concentrate for 10-15 minutes until medium peak forms. Slowly add sugar, a little at a time, until incorporated. Mix again for another minute or two until sugar mixes in fully. (This is ready when you can turn bowl upside down and meringue stays put.)
  3. Using spatula, fold almond mixture into meringue. To fold, carefully bring spatula through middle of bowl toward you. Scraping sides of bowl, fold bottom layer onto top portion. Continue until mixture is fully incorporated and fluid (like molten lava). Note: If you do not properly fold batter, you will end up with cracked or hollow shells. Making sure the air is evenly distributed and the consistency is just right is very important. To test consistency, scoop batter with spatula into “8” shape. One clean swoop, means you’re ready to pipe!
  4. Fill piping bag with mixture. On parchment-paper-lined baking sheet, draw 2-in. circles or dispense even amount of dough. To eliminate air bubbles, slam tray onto kitchen counter. Smooth out any “nipple” that formed from piping. Allow shells to sit for 90-120 minutes or until outside is no longer sticky to the touch.

Preheat oven to 300 degrees F.

  1. Bake 14 minutes, checking frequently toward the end. You should be able to peel shells off parchment paper without sticking.
  2. Using spatula, carefully lift macaron shells off parchment paper. Transfer to cooling rack.

Buttercream:

  1. Preheat oven to 400 degrees F.
  2. If making homemade pumpkin puree, slice small baking pumpkin in half and lightly drizzle with oil. Place halves onto baking sheet, flesh side up, and roast for 40 minutes or until tender.
  3. Once done roasting, add chunks of cut pumpkin into food processor (skin removed) and blend until smooth. (Use remaining purée for future recipe.)
  4. In mixing bowl, beat room temperature butter until fluffy and white in color. Add powdered sugar, almond milk, pumpkin spice and either canned or homemade pumpkin purée and mix until frosting forms; about 3-4 minutes.
  5. Spoon buttercream into middle of macaroon shell and top with another shell; carefully wiggling the two halves together. Once all are assembled, place into refrigerator for 24-48 hours or freeze up to 3 months.

 

Chef’s tip: To prevent a major macaron fail, avoid substituting ingredients or altering measurements.

With apple season upon us, now is a great time to get a head start on all things apples, included this easy plant-based donut! To get started, you can use store bought apple cider or you can take a homemade approach and check out my recipe below. A secret tip to add a boost of Vitamin C is to add some fresh squeezed orange juice to freshen it up even more. Overall, these donuts bring back awesome memories of apple picking and other fall activities.

Apple Cider Donut

Yields 12 donuts

Ingredients

Dough:

3 1/2 cups King Arthur organic flour 

3/4 cup sugar 

1/2 tsp. baking soda

2 tsp. baking powder

1/4 cup butter

3/4 cup Apple cider, concentrated

2 Tbsp. Bob’s Red Mill Egg Replacer + 4 Tbsp. filtered water, mix and set aside 

1 tsp. cinnamon

1/2 tsp. nutmeg

1 tsp. Vitacost Himalayan Pink Salt 

Topping mix:

1/2 cup brown sugar

1 Tbsp. cinnamon

1 Tbsp. Palate Cinnamon Sugar Cookie

2 tsp. pumpkin spice seasoning

Directions

  1. In a mixing bowl, combine all of the dry ingredients: flour, sugar, nutmeg, cinnamon, baking powder, baking soda, and salt. Set aside. 
  2. In a kitchen-aid mixer, mix together apple cider and butter. Then add egg replacer. Slowly incorporate the dry mixture into the wet, on a slow speed. Once dry incredients have combined, pour onto a floured counter top.
  3. Knead dough until it is not so sticky. Roll out until it is about 1/2 in thick, make sure not too thing or they won’t puff up as well. With a circle cutter, cut out your donut shape and use a cutter to make the hole in the middle of the donut.
  4. In a large pot, full with 2 1/2 cups of oil and bring to around 325 degrees to 350 degrees F. Add donuts into oil and bake for 2-3 minutes or until both sides are brown and puffed. 
  5. Immedietly remove donuts from oil and place into bowl with topping mixture. Roll around to coat and place on baking rack to cool.

Chef’s tip: You can always finely chop up peeled apples and add them to the dough.

Breakfast Oats with Strawberries and Coconut

After picking apples at a fruit farm, what are you going to do with them? In this recipe, you can take those apples and make an amazing dairy-free caramel that will bring you back to those childhood memories of fall as a kid. This is a great recipe to make with your young ones during the holiday season, so please feel free to give it a try! You and your kids will be so happy with how these come out.

Yields 12 servings

Ingredients

12 apples

1 cup Earth Balance Vegan Buttery Stick

1-1/4 cups Vitacost brown sugar + 1/4 cup water

2 cup Vitacost brown sugar

2 tsp. vanilla extract

14 oz. condensed “milk”

Directions 

  1. In your sink, allow apples to soak in hot water for 5 minutes to remove the wax. This will help the caramel stick to the apple better. Use a wash cloth to wipe and remove any wax residue as well. 
  2. Place popsicle sticks into apples and place into the freezer for 1 hour. This will also allow the caramel to stick to the apples better.
  3. In a sauce pan, add all ingredients and bring to a boil on medium-high heat. Make sure to constantly stir until 20-25 minutes have passed or temperature reaches 245 degrees F (soft ball stage).
  4. Remove from heat and and allow to cool slightly before adding the vanilla extract. Allow caramel to cool to thicken. 
  5. Remove apples and dunk the frozen apple into the caramel sauce and then immediately into the chopped peanuts. Be sure to carefully press into the caramel to stick.
  6. Place apples onto a lined baking sheet with parchment paper (lightly greased with butter) to prevent sticking. Put into the fridge for an hour to allow caramel to set. 

 

Chef’s tip: To test the caramel, drop a tiny amount into a glass filled with water. If it forms a hard ball, it is ready. Caramel can differ from person to person so this is a neat way to check!
